Course Overview

The WSET Level 2 Award in Sake takes you well beyond the basics. You’ll explore the key production processes in real depth — from the rice and how it is grown, through steamed white rice and the role of kōji, to the approaches to alcoholic fermentation and the post-fermentation choices that shape each final style. You’ll then study how sake is categorised, graded and labelled, including the two categories of sake, the eight grades of premium sake, and the principal speciality styles (nigori-zake, nama-zake, sparkling sake and koshu), along with the key Japanese labelling terms. You’ll learn to taste and describe sake using the WSET Systematic Approach to Tasting®, understand how to store, serve and pair it with food, and earn an internationally recognised certification — all from home.

There are six modules:

Module 1: Introducing Sake — the common and optional ingredients used to make sake, and how to taste and evaluate quality using the WSET Systematic Approach to Tasting® and Sake-Lexicon

Module 2: How is Sake Made? — the rice used for sake and how it is grown, steamed white rice, the role of kōji, and the approaches to alcoholic fermentation and their impact on style

Module 3: After Alcoholic Fermentation — the post-fermentation options and their impact on style, how and why sake is stored at the brewery, and why sake is diluted before packaging

Module 4: Sake Labels and Style — the two categories of sake, the eight grades of premium sake, the principal speciality styles, key Japanese labelling terms, and the production choices behind delicate ginjō and rich junmai styles

Module 5: Serving, Storing and Pairing Sake — ideal storage conditions, common faults, correct serving procedures and temperatures, and the key considerations when pairing food and sake

Module 6: Revision and resources — including a mock feedback exam

Online Program

You can choose from multiple start dates, with courses regularly scheduled throughout the year. You will have five weeks from the course start date to work through the six modules, which should be followed in sequential order. We recommend setting aside around six hours of study per week to cover the online activities and read the relevant chapters in your textbook — roughly 30 hours in total, plus revision time. Regular access and participation in the online activities is essential for this mode of study. You’ll have access to a certified sake educator through the online portal and can ask questions throughout the course.

Examination

Your WSET Level 2 exam is completed fully online using remote invigilation. You must have a laptop or desktop computer to complete the exam. Fine Vintage offers regular online exam dates to fit your schedule. You can pick your exam date and time online immediately after you register for the course, or you can select your exam date anytime in the next 11 months. You have one year from your course start date to schedule and take your exam.

The exam consists of 50 multiple-choice questions, to be completed in 60 minutes. A grade of 55% or higher is required to pass. You will receive your results by email, and if successful, you will receive a WSET certificate — a formal qualification in sake with international recognition.

We require 10 business days notice to register you for the WSET Level 2 exam. There is a US$100 fee to change your exam date after it is scheduled or to resit the exam, if required.

You should have a reasonable degree of technical ability to use the examination software. You will receive detailed set-up instructions after you register.

Testimonials

BYANCA GODWIN

When I decided to begin my wine education journey Fine Vintage Ltd. was my first choice. James Cluer MW and his team provided a first class experience which propelled my love and curiosity for wine into a lifetime quest to further my knowledge. I would highly recommend the WSET Level 1 course with Fine Vintage to any student who desires to learn from outstanding teachers who inspire you with their wealth of knowledge while exposing you to a benchmark selection of quality wines.

I’ve completed WSET 1 & 2 through Fine Vintage’s weekend courses, and I cannot recommend them enough. Particularly for those who work full time such as myself, the weekend courses are a great way to pursue an education in wine while juggling a busy schedule. The programs are well structured and paced, and the instructors are enthusiastic and personable – creating an enjoyable and manageable learning environment.

Having taken both WSET 1 and WSET 2 Fine Vintage definitely executes the classes at an exceptional level. The instructors were outstanding and taught the class with great passion providing high quality wine with many different varieties to taste! Not only did I learn much more about wine, but also after taking WSET level 2 from Fine Vintage it increased my interest and passion for wine exponentially. Fine Vintage WSET 1 training was more than I expected. The instructor was incredibly knowledgeable and brought the education to life through sampling many different wines from a variety of regions while taking us on a tour of the basic fundamentals of wine. Whether you are a novice or starting your career in wine, I would highly recommend Fine Vintage, Ltd.

YULE SCHMIDT

I’ve taken wine courses with various providers over the years and can unequivocally say that Fine Vintage stands in a league of its own. The quality of wine alone sets the company apart but its real advantage is its instructors. Every FV instructor I’ve had has brought as much enthusiasm to the classroom as they’ve brought experience, drawing on both to bring the world of wine to life. You can’t get that kind of education from a textbook.
