The Academy of Cheese is the gold standard in cheese education. Established in London, the Academy offers 4 Levels of Certification. The Level 1 exam is a multiple choice format taken Online on a schedule you choose, and results in a digital certificate and pin being mailed to you from England.

The two expert instructors for this course are Tracey Johnson from British Columbia and Patrick McGuigan from England. Patrick is the world’s leading writer in cheese with columns in The Sunday Times and author of 3 books on the subject. Tracey has over 10 years experience making cheese, is a Certified Cheesemaker, and runs the largest Facebook group of cheesemakers in the world.

These true professionals will welcome you at 9.30 a.m. to the course, which ends at 5.30 p.m. with one hour for lunch. You will taste 12 samples of fine cheeses and pair them with 6 different classic wines. You will learn how to taste cheese, describe it, how it is made, matured, prepared and served.

This course also includes a focus on matching wine with cheese as both Tracey and Patrick are WSET certified in wine. You will need to bring your tasting glasses or purchase a set from us.

You will receive digital access to the Academy of Cheese Delegates’ pack, including a book profiling 25 of the most important cheeses along with tasting sheets. You also receive 12 months access to the Academy of Cheese Level One Learning Road and Cheese Library.

Basically, you are going to learn A LOT about cheese, and wine pairing, from two of the world’s leading experts who are traveling to teach these occasional specialty courses.

The Academy of Cheese Level 1 is a fantastic introductory cheese course.

The Academy of Cheese Level One Associate training package has been designed to be beginner friendly and accessible.

Who takes this course?

Everyone! The vast majority are cheese and wine lovers from all walks of life, and all ages.

We do welcome many people from the food, wine and hospitality industry, especially those working in restaurants, retail and distribution. This is an introductory course and we presume no prior knowledge, but we do cater to the more advanced too. Our instructors are happy to answer questions throughout the day.

Study Guide

Immediately upon registration we will email you an access code to the online study guide. It is advantageous to read it before the course, although not essential.

Tasting Glasses

If you have taken a course with us before then please bring your Fine Vintage tasting glasses with you.

If you do not have our set of 6 tasting glasses you will need to purchase them at registration for $49. These are then yours to keep forever.
